
Let me start off by saying that I've seen this soup all over social media and have always wanted to take a stab at it. I don't know why I've waited this long! This soup is a full meal and is meaty, savory, and will be loved by your friends and family.
This is a quick soup to make which makes it perfect for a weeknight dinner.
I researched other people's recipes for this soup and there are a lot of variations. Some people cook the pasta in a separate pot, while others, like myself, cook the pasta directly in the soup. And, speaking of pasta, you should use lasagna noodles for this recipe, however, from my experience with my White Lasanga recipe, I found it a bit harder to eat. I used farfalle instead.

Lasagna Soup
Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes
Servings: 6 Cups
INGREDIENTS
2 Tbsp Olive Oil
1 Md Onion, diced
2 Cloves of Garlic, minced
2 tsp Salt
1 tsp Garlic Powder
1/2 tsp Black Pepper
1/2 tsp Oregano
1/2 tsp Basil
1 lb of Ground Beef*
6 Cups of Chicken Broth
1 15 oz. Jar of Marinara Sauce
6-8 oz. Farfalle Pasta
Topping:
1 Cup Ricotta
1/2 tsp Fresh Basil & Oregano, finely diced (or, 1 tsp of each if using dried)
2 Tbsp Shredded Parmesan
Olive Oil to drizzle
INSTRUCTIONS
In a Dutch Oven or Soup Pot, heat 2 Tbsp of Olive Oil on medium high heat. Add in the onions and cook until translucent (est. 3-5 minutes).
Add in the garlic, stir for about 30 seconds before mixing in the spices. Stir for another 30 seconds until fragrant.
Add in the ground beef and brown making sure to break into small pieces.
Add in the Chicken Broth and Marinara Sauce and bring to a boil.
Once the soup is boiling, add in the Farfalle pasta and cook according to the box.
While the pasta is cooking, prepare your ricotta topping by mixing the ricotta, parmesan, and herbs together.
Once the pasta is al dente, it's time to serve and enjoy! Add a dallop of ricotta, a sprinkling of parmesan cheese, and a drizzle of olive oil.
