Irish Potato Soup

It's St. Patrick's Day so let's celebrate with SOUP! Here's an easy recipe you and your family will love!



INGREDIENTS

1 MD Onion, diced

2 Stalks of Celery, diced

2 Tbsp Butter

Salt & Pepper, to taste

4 Cups of Potatoes (I used Yellow Yukon Gold), diced

4 Cups Chicken Broth

1/2 Cup of Whole Milk

Garnishments: Bacon, Cheese, Fresh Parsley, Fresh Chives


INSTRUCTIONS

  1. Melt butter in a pot. Add in the onions and celery and cook until tender (about 2 minutes).

  2. Add in the potatoes, salt & pepper, and Chicken Broth. Bring to a boil and let cook until the potatoes are tender (10-15 minutes).

  3. Turn off the heat. Using an immersion blender or blender, blend up everything until smooth.

  4. Time to serve! Garnish with bacon, cheese, fresh parsley, and fresh chives.
