Step 1: In a large pot, melt butter over medium heat. Add onion, carrots, and celery, and cook until softened (about 5 minutes). Stir in the garlic and cook for another 30 seconds until fragrant.
Step 2: Add in the chicken stock, bring to a boil and simmer for 5-7 minutes until vegetables are tender.
Step 3: Using an immersion blender, blend everything until smooth. You can use a blender for this if you do not have an immersion blender.

Step 5: Thicken up the soup my adding in 1 Tbsp of cornstarch mixed with cool water.
