Cream of Asparagus Soup

This is my all-time favorite soup. It’s perfect for a cold day and the absolute BEST remedy for when you’re sick.
INGREDIENTS 2 pounds of asparagus (about 2 bunches) 1 medium yellow onion 2 cloves garlic 2 Tbsp unsalted butter 1 1/2 tsp kosher salt 1/4 tsp black pepper 4 cups chicken or vegetable broth 1/2 cup heavy cream INSTRUCTIONS 1. Prep ingredients. 🔪 Trim ends of asparagus stems (white/purple ends) and then chop into 1/2” chunks (setting aside some tips for garnishing. 🧅 Diced onion 🧄 Peel and chop garlic 2. Melt butter in pot and add in the onion and garlic. Sautee until tender. Add salt and pepper. 3. Add In asparagus and cook until the asparagus is tender crispy (8-10 minutes) 4. Add chicken broth to the pot and bring to a boil. Turn heat down and simmer for 10 minutes. 5. Blend everything using an immersion blender or ladle into a blender, return to pot. 6.
