This is my all-time favorite soup. It’s perfect for a cold day and the absolute BEST remedy for when you’re sick.
PREP TIME: 5 minutes
COOK TIME: 20 minutes
TOTAL TIME: 25 minutes
SERVINGS: 4-6 Bowls of Soup
INGREDIENTS
2 pounds of asparagus (about 2 bunches), trim ends, roughly chop in 1" pieces
1 medium yellow onion, diced
2 cloves garlic, minced
2 Tbsp unsalted butter
1 1/2 tsp kosher salt
1/4 tsp black pepper
4 cups chicken or vegetable broth
1/2 cup heavy cream
INSTRUCTIONS
1.Prep ingredients.
2. Melt butter in pot and add in the onion and garlic. Sautee until tender. Add salt and pepper.
3. Add In asparagus and cook until the asparagus is tender crispy (8-10 minutes)
4. Add chicken broth to the pot and bring to a boil. Turn heat down and simmer for 10 minutes.
5. Blend everything using an immersion blender or ladle into a blender, return to pot.
6. Add heavy whipping cream and salt and pepper to taste.
Serve hot and enjoy!
