This recipe is an excellent meal to pop into the crock pot during the week. It's simple and makes a delicious meal!
INGREDIENTS
3-4 Boneless Skinless Chicken Breasts
1 Can of Fire Roasted Corn, drained
2 Cans of Rotel, and juices
1 Can of Black Beans, drained & rinsed
4 Cups of Chicken Broth
Salt & Pepper
8oz Cream Cheese
1 tsp Chipotle Seasoning
1 tsp Creole Seasoning
INSTRUCTIONS
Add all the ingredients (except Cream Cheese) to the crock pot and cook… that easy.
Shred the chicken with a fork, then stir in the Cream Cheese prior to serving.
My chicken is frozen so I set my cooker to low for 10 hours, however, you can do high for 4 or 6 hours with thawed chicken.
Garnish with Fresh Lime Juice, Crispy Tortilla Strips and Sour Cream!
