This version is based on the internet-favorite Panera-style recipe—but I added a few twists that take it from classic to crave-worthy. We’re talking smoky bacon bits and sweet kernels of summer corn folded into the melty, cheesy goodness. It’s cozy comfort food, but make it extra.

Ingredients (Serves 4–6)
6 slices thick-cut bacon, chopped
4 tbsp salted butter
½ cup yellow onion, chopped
¼ cup all-purpose flour
1¾ cups chicken broth
2 cups half & half
3 cups broccoli florets, chopped into bite-sized pieces
1 cup julienned carrots
Kernels from 2 fresh corn cobs
1 tsp salt
Pepper to taste
2 cups shredded cheddar cheese
How to Make It
1. Cook the Bacon
In a large pot, cook chopped bacon over medium heat until crispy. Transfer it to a paper towel-lined plate, but leave that glorious bacon grease in the pot—trust me.
2. Sauté the Onions
Add the butter to the bacon grease and let it melt. Toss in the chopped onions and cook for 4–5 minutes, until translucent and just starting to brown around the edges.
3. Make the Roux
Whisk in the flour and keep whisking until it turns golden brown. This helps thicken the soup and gives it that rich, velvety base.
4. Add Liquids
Slowly pour in the chicken broth and half & half, whisking constantly to avoid clumps. Bring to a gentle boil, then reduce to a simmer.
5. Veggie Time
Stir in broccoli florets, julienned carrots, and the fresh corn kernels. Let everything simmer for 15 minutes, stirring every few minutes to keep the bottom from sticking.
6. Finish It Off
Add the shredded cheddar and stir until it’s completely melted and smooth. Season with salt and pepper to taste.
7. Serve & Devour
Ladle it into bowls, top with crispy bacon, and serve with crusty bread… or straight from the pot, no judgment.
