The Perfect Travel-Friendly Tomato Soup Recipe for Family Gatherings

There’s something magical about a warm pot of soup bringing people together, especially during family trips. Recently, we took a weekend trip to Georgia to reconnect with cousins—24 of us in total! With so many hungry mouths to feed, I knew I needed a recipe that was easy to make, crowd-pleasing, and, most importantly, travel-friendly. Enter: my go-to tomato soup recipe!

Packing for a trip can be chaotic, but this recipe is simple to prepare in advance. I pre-measured and packed all the ingredients before we left, making it a breeze to whip up a warm, hearty meal when we arrived. Plus, the ingredients are easy to transport, and you don’t need any fancy equipment to make it.

Ingredients You’ll Need

  • 2 - 28oz cans of Whole, Peeled Tomatoes

  • 1 can of Rotel (any heat level you desire)

  • 1 can of Evaporated Milk

  • 1 onion

  • 3 garlic cloves

  • 4 cups chicken broth (bullion cubes work great for travel)

  • 1/4 - 1/2 Cup Parmesan Cheese

  • 2 tsp Creole Seasoning

  • 1 tsp Oregano

  • 1/3 tsp Pepper

  • 1 tsp Garlic Powder

  • Salt


Equipment You’ll Need

  • Soup Pot

  • Immersion Blender


How to Make It


1. Prep Your Ingredients: Dice onions and mince garlic.

2. Cook the Base: In a large pot, sauté onion and garlic until fragrant. Then add in the spices.

3. Add Tomatoes: Stir in the tomatoes and rotel and stir well to combine.

4. Simmer: Pour in the broth, season with salt and pepper, and let it simmer for 20 minutes.

5. Blend and Serve: Use an immersion blender to create a smooth consistency. Stir in evaporated milk and Parmesan Cheese.


Tips for Success

Pack Ahead: Measure out dry spices and store them in a small container to save space.

Use Non Perishable Items: Using canned tomatoes and evaporated milk help with transportation.

Don’t Forget the Toppings: Serve with crusty bread, croutons, or a handful of Goldfish crackers!
