Pollo Asado

When I say we hit it on the MARK with this recipe, I mean it! If you want grilled pollo Asado that tastes just like the restaurants... this is the recipe for you. It's juicy, full of flavor, and is perfect on tacos, on a bed of rice and beans, or just alone.



INGREDIENTS

4-5 Lbs. Boneless, Skinless Chicken Thighs (you can use breasts as well)

1/2 Cup Olive Oil

1/2 Cup of Orange Juice

1/4 Cup of Lime Juice (about 3 limes squeezed)

1 MD Onion, Chopped

8 Cloves of Garlic, Minced

1 Tbsp of Achiote spice

1 Tbsp Cumin

1 Tbsp Salt

2 tsp Paprika

2 tsp Oregano

1 tsp Pepper

1 tsp Chipotle Pepper spice


INSTRUCTIONS

  1. Mix all the ingredients in a large bowl or zip-lock baggie. Add in your chicken and let marinade for 8 - 24 hours.

  2. Remove from the marinade and grill under internal temperature reaches 145 degrees.

  3. Serve!


Alternative Cooking Options:

Air Fryer - 400 degrees for 8-10 minutes

Stovetop - cook on Medium Heat until internal temp reaches 145
