It’s hearty, loaded with flavor, and comes together in one pot—hello, easy cleanup! Whether you’re using a jar of your favorite enchilada sauce or making it from scratch (my homemade version is linked [here]), this soup is perfect for busy weeknights or chilly weekends.

Sauté the Onions & Brown the Meat.
Heat the olive oil in a large pot over medium heat. Add the onions and cook until slightly tender. Next, add ground beef and cook until browned breaking it up as it cooks. Season with salt and pepper.

Season.
In the same pot, add the garlic and stir for about 30 seconds and cook for 2–3 minutes until it begins to soften. Next, add in the Cumin, Chili Powder, and Garlic Powder.

Bulk it up.
Add in the Corn, Black Beans, and Tomatoes. Stir well to combine. Next, add in the Enchilada sauce and Chicken Stock. Bring to a boil and let simmer for 15-20 minutes so all the flavors combine.

Make it creamy
Turn off the heat and stir in the sour cream until the soup is creamy and smooth. Then add the shredded cheese and mix until melted and fully incorporated.

Final seasoning
Taste and adjust with more salt and pepper if needed. Optional: a splash of lime juice can brighten it up beautifully.

Serve it up
Ladle the soup into bowls and top with your favorite garnishes—think tortilla strips, diced avocado, fresh cilantro, or an extra sprinkle of cheese.

2 tbsp Olive Oil
1 lb Ground Beef
1 MD Onion
3 Cloves of garlic
2 Cups of homemade enchilada sauce or one Lg can
1 can of fire-roasted tomatoes
4 cups of chicken stock or broth
1 can black beans drained and rinsed
1 cup of frozen roasted corn
1 tsp group cumin
1 tsp chili powder
1 tsp garlic powder
Salt & Pepper to taste
1 cup of shredded cheese
1 Cup Sour Cream
