Cilantro Lime Rice | A Chipotle Dupe

If you are a Chipotle lover, this dupe is for YOU! Here is how I make my very own Cilantro Lime Rice that is VERY similar to Chipotle. Get ready to love this recipe!




PREP TIME: 5 minutes

COOK TIME: 20 minutes

TOTAL TIME: 25 minutes

SERVINGS: 4


INGREDIENTS

1 Cup of Rice, rinsed

2 Cups of Water

1 Clove of Garlic, minced

2 tsp Salt, divided into 1 tsp each

1/2 tsp Olive Oil

1 Tbsp Fresh Cilantro, chopped

2 Limes, cut in half

Lime Zest of 1/2 Lime


INSTRUCTIONS

  1. Make the Rice. I used a rice cooker, however, you can use the stove top too, here's how:

    1. Rice Cooker - Add the rinsed rice, water, garlic, 1 tsp of the salt, and olive oil to the rice cooker and cook. Easy Peasy.

    2. Stove Top - Add the rinsed rice, water, garlic, 1 tsp of the salt, and olive oil to a pot. Bring the water to a boil, reduce heat to low, cover the pot and let cook for 20 minutes.

  2. Fluff the cooked rice with a fork. You can use the same pot you cooked the rice in, or transfer to another bowl.

  3. Add in freshly chopped cilantro, the juice of 2 limes, and the zest of 1/2 of a lime to the pot and mix well.

  4. Add 1 tsp of salt (you can add more to taste as needed).

  5. Serve and Enjoy!
