My favorite one-pot meal that is not only super easy but so so SO delicious!

INGREDIENTS
1 MD Onion, diced
2 Tbsp Olive Oil
2 Chicken Breasts (I used one breast and one thigh), cubed
1 tsp Salt
1 tsp Onion Powder
1 tsp Garlic Powder
1/2 tsp Cayenne or Creole Seasoning
1/2 tsp Pepper
2 Bags of Vigo Mexican Rice or Yellow Rice
Water
INSTRUCTIONS
1. Sauté onions in olive oil until tender.
2. While the onions cook, season the chicken pieces with all spices.
3. Add chicken to onions and brown until the chicken is golden and cooked.
4. Add both bags of rice, and stir well to combine.
5. Add water according to the package. It will differ based on what brand or type you use.
6. Bring to a boil, then turn down the heat, put the lid on, and let cook, untouched, for 20 minutes.
7. Fluff the rice and serve!
Add some parsley, avocado, salsa, sour cream, or cilantro for an extra zap of flavor!
