Chicken Cordon Bleu Soup

This might become your new favorite soup recipe. It's a delightful twist on the classic chicken cordon bleu, combining tender chicken, savory ham, and creamy cheeses into a warm, comforting bowl of goodness. Perfect for chilly evenings or whenever you're craving something hearty, this soup is not only easy to prepare but also packed with flavor. Each spoonful offers a rich blend of ingredients that will satisfy your taste buds and warm your soul.



A few important notes:


CHEESES: I chose to go with Gruyere and Swiss, however, you can do just Swiss or just Gruyere. Both these cheeses are similar in flavor.


CHICKEN: I made this soup with a rotisserie chicken because it's time saving and I can use the rest of the chicken carcass for other things. Alternatively, you can cook up two chicken breasts and dice them up.


CREAMS: I used 1/2 Heavy Whipping Cream and 1/2 Whole Milk. You can substitute and use 2 cups of Half & Half instead.


SEASONINGS: This recipe does not call for spices. You may not even need to add salt and pepper at the end. The ham and cheese add a lot of salt already. Definitely add in freshly cracked pepper for an extra kick.


CHICKEN CORDON BLEU RECIPE


Prep Time: 10 Minutes

Cook Time: 20 Minutes

TOTAL TIME: 30 Minutes


INGREDIENTS

3 Tbsp Butter

1 Md. White Onion, diced

2-3 Cloves of Garlic, minced

1/4 Cup of All Purpose Flour

3 Cups of Chicken Broth or Stock

1 Cup Heavy Whipping Cream

1 Cup Whole Milk

1 Cup Gruyere, grated

1 Cup Swiss, grated

2 Cups Rotisserie Chicken Breast, diced

1 Small Ham Steak, diced (apprx. 1 cup)

1/2 tsp Black Pepper

1/2 tsp Salt (optional)


INSTRUCTIONS

  1. In a Dutch oven or soup pot, add in the Butter and melt over Medium-High heat. Once melted, add in the onion and cook until tender.

  2. Add in the garlic and stir for about 30 seconds. Reduce the heat to Medium and whisk in the flour a little at a time.

  3. Whisk in the Chicken Broth slowly, then the Heavy Whipping Cream and Milk. Continue to heat and just before it begins to boil, reduce the heat to low.

  4. Stir in the Cheese, Ham, and Chicken. Cook for another five minutes.

  5. Add Salt and Pepper to taste.

  6. Garnish with freshly chopped Parsley and Croutons.
